Heading down there for a week on Saturday. Looking for fun stuff to do, but will have a 3 year old with us. We already booked the Sea Screamer but looking for other fun local stuff.

Do the Shell Island day-cruise-thing. Even if you've been a million times it's still pretty cool. Your 3 year old will have a blast playing in the sand in the bay then walking over the dunes to the Gulf and playing in the surf. Lots of Dolphins in this area too. The tour by Captain Anderson s used to take them to Sand Dollar Cove on the island which is an old haunt of mine. When I was a kid it was better than Disneyland...but I'm also weird like that. But seriously, it's pretty cheap and a great way to kill a day and have fun.

Went there in early march for spring break but I'm also Ina different age group than you and spent most of my time drinking so unless you want bar help I prolly can't be of much help.
You can't go wrong with this advice, don't think I've ever been out there when there wasn't dolphins around. I'd also recommend a sunset catamaran sail out of the same marina.
If you like to drink they have this one German pub on the beach that is like a german hooters and serves good beer. It also has live music and pretty good food.
Toucans is also a nice family friendly restaurant on the beach that serves pretty good seafood.
