Filet, medium rare
It's hard to beat this, but a ribeye is my standard. As for how I take it...if it ain't chicken, I'm getting it medium rare. If anyone ever says "well done" I SMH & do an invisible facepalm.

I like a Strip somewhere between rare and medium rare; somebody else likes a Porterhouse medium rare; the next guy likes a Rib-Eye Pittsburgh; the other dude likes a filet medium.

My go to steak is a T-Bone (inch and a half thick) cooked medium rare from a local butcher.

I only judge medium well to well done. That causes me to question you. If you get it medium I assume you just don't eat steak a lot.
I found a cut called "chuck eye steak". It is tender, well marbled, grills great and is only about 6.00 a pound
