Thoughts re 'Southern'
Best Breakfast - Fried Backstrap with real buscuits and white gravy. Add a side of grits.
Lunch Thoughts - Fried chicken, stewed chicken or chicken with dumplings, with sides of fresh green beans or field peas, mashed potatoes and gravy, greens (mustard, turnip, or collards, with hot pepper sauce) fried okra and cornbread. Served with pitchers of sweet tea and lemon.
Substitute or add for lunch: fried catfish with hush puppies and fries.
Dinner Suggestions - Roast beef with mashed potatoes and brown gravy, served with steamed squash and zucchini, brussels sprouts or cabbage, whole kernel corn and cornbread. Pot of sweet tea with lemon plus adult beverages.
Alternate Dinner - Grilled Rib Eyes (rare to medium rare) along with grilled corn, grilled asparagus, baked potato and arugula salad topped with caesar dressing and good feta cheese. Deserves a good red wine.
Substitute at Dinner - Grilled Tuna, Shark or similar firm flesh fish and perhaps grilled portobello mushrooms.
Served with cold crisp white wine such as pinot grigio.
Just some Southern thoughts.
Skipped Cajun/Creole, along with Gulf Coast seafood and wild game intentionally. Those delicacies deserve their own chapters.

Yeah, i'm out on the shark. Unless it's Mako, that would be completely acceptable. Swordfish would be another good substitute.
Depends on the type of shark. Certainly not blue shark, because they excrete urine through their skin, but I have a local fishmonger who sells excellent shark steaks. I have also caught sharks in the Gulf of Mexico that were excellent. I just cut them down each side of the backbone, remove any dark red meat and leave the skin on, season with natures' seasoning lemon pepper, granulated garlic (NOT garlic salt), fresh ground pepper, then grill until the skin separates from the meat. Do not overcook! I also grill king mackerel the same way and it is excellent.
And yes, swordfish is also excellent on the grill.
Swordfish is on a different planet than sharks or kings... I personally never put sharks in the boat... They just stink... I know some people like it but I can't stand em... Kings are good if fresh caught and fried or if you steak it and take out the loins and boil it... Other than that I use em for crab trap bait
Nearly killed a man today. Ordered lunch from our usual place. They do have good sweet tea. Guy shows up to deliver it and I get a glass of unsweetened tea with no ice. Da fuq????

I had to work when they caught him. Luckily I was working in the keys. Went over to the marina to check it out. He didn't smell as bad as I thought it should have. They caught it in a Fiu dolphin tournament in the keys. 1000 pounds.
