I usually experiment with different dry rubs each time. I don't think they've ever turned out bad for me, just something I can really brag about. Always looking for new things.

Some ribs I smoked.
Willie and I were talking about ribs recently on the Iowa board and I told him my method that's basically fool proof. It's the 3-2-1 method. Or 2-2-1 method, depending on how hot your smoker is running and how you prefer your ribs.
It's simply, in order from start to finish, 3 hours(or 2) not wrapped, 2 hours wrapped in foil, then 1 hour not wrapped to finish them. It will never fail you.
My brisket Rubb recipe
3 tsp of cummin,brown sugar and onion powder
2 tsp of garlic salt
1 tsp Cheyenne pepper.
Cut slices in the fat of the brisket 1/4" apart down to the membrain.
Rub Frenches Mustard over the brisket then put on rub, wrap in plastic wrap and put in fridge over night.

IMO dry rub rocks. My favorite way. I did oyster stew tonight. The ribs look good, kinda wish I had grilled some.

great on grilled pork chops too....marinate for about 1-1/2 hrs and hit the grill with them.

I can't wait to step my grill game up. All I have right now is a cheap propane grill, I use it all the time when its nice out. No pics right now, its buried under almost a foot of snow.
