Just lit the grill, got some pig rubbed down. Been wrapped up and in the frig since yesterday. 120 pound gilt, expecting good things from this one. Will post pics shortly.
This has me excite. Here's one I did in my future father-in-laws china box.
You got me beat on that one. Just doing the ham this time. Got a nice gator Friday night. Plan on throwing it on the grill to blackened sometime this week. If you haven't done one like that, you should try it. Highly recommend.

I've only fried it, this blackening has me intrigued though. Doing some pork chops tonight. Put them in a teriki style marinade yesterday.
Smoked salmon for 6 hours yesterday. It was awesome....gonna have again tonight. Served over salad with feta and olives and homemade dressing of evoo, white wine vinegar, lime juice, fresh basil, salt and pepper. First time doing it on a gas grill...was actually easier than using a regular smoker.
Kinda the same concept as blackened redfish. Something I was experimenting with one weekend. I've done the whole tail and cut steaks from the lizard. The steaks have a crunchier outside, but when cooked right the backstrap along the spine should pull out in one piece. Delicious.

Do you spray it every 45-60 minutes?
I will spray it three or four times with a thin vinegar base sauce. Then wrap in foil and cook 4 to 5 hours.
Edit to add, cook for two hours before wrapping in foil, then additional 4or5

Sounds very good. Have a friend from Alaska, who has salmon shipped to him. He's gotten to where he doesn't tell me when its here. I love fish, usually eat some type once a week if not more.+1

I just started some jerk chicken and garlic herb marinated chicken for my lunch next week. Also started a chicken breast for a BBQ chicken pizza Im going to grill.
God, give me patience today. If given strength I may beat someone to death.
Nothing on the grill this weekend but we do have plenty of freshly caught stuffed flounder. This is not the exact one (took the flounder pic several months ago) but it looks the exact same. Plus a BDay cake for the girlfriend that got smashed in the box. lol
