  • Grab 2lbs of beef tips, sear them in a med/hot skillet on the stove then put them in the crock pot.

    Add the following:
    - one 12 oz coca-cola
    - one cup sour cream
    - one can cream of onion
    - one can cream of mushroom
    - one chopped onion
    - one half pack of hidden valley ranch powder
    - one tbsp of meat tenderizer
    - one tbsp of ground black pepper

    Throw all this in the crock pot before work, put it on low heat, put the top on and walk away.
    When you get home make a pan of white rice and dinner is served.

  • Bump for an awesome salsa. I usually but the Wholly salsa, because it makes everything else in a jar taste like crap.

    I normally prepare the hardcore man-meal, with beef, chicken and Coli dog entrees....only chips and homemade salsa and guacamole as dips with nachos before serving the meal.

    Yes my dear....they're sold outside the Coliseum on game day by vendors, but I like my own quality control, and make my own.

    Hebrew National dinner franks or cajun style (hot) sausage
    bacon
    onions -purple and yellow
    jalapenos - fresh, never the canned junk
    bakery hot dog buns - I like the kind I buy at this bakery, jalapeno and cheese
    deli mustard

    Wrap dinner franks with good bacon, secured with toothpicks, cook in heavy cast iron skillet. Brown onions and jalapenos (pierce and cook whole) in bacon drippings. Top the dog with the grilled onions and jalapenos with whatever condiments you prefer.

    These can be prepared at the tailgate after you stuff your men with all kinds of grilled meats and real tailgate food, to top off the day before going into the stadium, you just need to cook the onions and jalapenos in a separate skillet with a little reserved bacon.

    You can serve these with homemade chips or yam fries and coldslaw.

    Do y'all have "Conecuh"brand sausage in Cali? Unless you drop a deer off at some backwoods processor, you'll never find a better smoked sausage.

    That's my only issue with most of the gumbo or Jambalaya I've had in Louisiana. The local stuff isn't as good as Conecuh.

    I even buy their seasoning. Some soy, Worcestershire with Conecuh hamburger/steak seasoning and black pepper. Great flavor, and the pepper and salt in seasoning firm a great crust when cooking on high heat.

  • Bump, since I've got nothing to do but cook, drink, and wait. I did some baby backs last night on my grandma's pos gas grill. Rubbed them with Conecuh pork seasoning and ground black pepper. Tired indirect heat, using only one burner on low. Against all odds, they were great. And they finished right as a heavy band of rain came into mobile. If I'd have stayed in Nola, it would have been turkey sandwiches in the dark.

  • I know there are a LOT of people who love Conecuh Sausage, but I am a bigger fan of Wrights Smoked Sausage actually. I'll see if I can find a link. for my taste buds this is the best I've ever had.

    Just as well...the ONLY thing I don't like about the South, is the food.

    The football part is questionable, but I guess y'all have to have one good thing in the region, one thing to gloat about....yeah, y'all master in that. Y'all killed sportsmanship.

    you don't like bbq, pot roast with gravy, or pecan pie? Unimaginable. Though you get in some places, it's a ton of fried garbage.

    I can't say I can think of good that's distinctly Cali. I was in Orlando for years, and there were restaurants that claimed Cali dishes, but I was skeptical. What would you say is uniquely Cali?

    You're kidding...California is very diverse, with food from every region of the country, and the world. Even taking our tailgates, you will see every kind of food imaginable served..roasted lamb on a spit, roasted pig, bulgogi, and Mexican food from every region in Mexico.

    The USC fan base is one of the most ethnically diverse in the country, a fact evidenced by the gameday grub. Nearly every tailgate cooked up some kind of meat, but the style and flavor varied tremendously. An entire lamb rotated on a spit for hours while being bathed in a lemon juice marinade. Carne asada tacos were served with a tasty guacamole sauce. Others grilled ribs, chicken, and all kinds of sausage, from hot links to bratwurst. All cooking was a big production and the most important aspect of the day.
    Grade: A-

    This is just about tailgating..imagine with all the ethnic districts in Los Angeles, and all over California, the different foods we're exposed to. One can say Mexican food is everywhere, but so is every cuisine in the world.

  • I knew there was a lot of Mexican, and other ethically diverse cuisine. I was more curious about if there ess anything from Cali that isn't done as good elsewhere. Like gumbo in Louisiana, pork shoulder in the south, pizza in NYC, etc...
