What level is your game at?
If you're not worried about really shaping shots and just want a straight shooting iron that is accurate then Ping G15 or Mizuno JPX800 irons are amazing.
If you are looking for more control then Adams CB2 or Titleist AP1 are awesome.
I'd always buy a year old as well. The technology hasn't improved to justify spending more on the brand new models.

scotland is great.
melbourne australia is a great trip too. go during the aussie open, check out some great tennis and they have multiple great old alister mackenzie courses in that city including royal melbourne which was rated top 5 course in the world for many years. i played many in that city, but wasn't able to play royal melbourne

It is the style you must play in order to get the ball in the hole that determines if a course is a links course. If you watched Snedekers play last weekend you will understand he didn't hit many shots that you would consider "traditional links" style golf shots

There are very few left. Bottom line is Pebble Beach may have links in its name, and it may be by water, but its not a place where you play links golf. You play pebble beach the same way you would play Medinah, in the air.
