If you grind your own meat you can absolutely serve it rare. As long as you buy locally, know when it was killed, and all that a burger can be eaten rare. And it's amazing.

Grinding your own meat has nothing to do with it. The bacteria in rare ground beef is what makes you sick. Steaks can be cooked rare because there is no harmful bacteria in the center cut of the beef.

It all depends on the steak anything with a bone at least to medium the meat closest to the bone will always be a little under, no steak sauce but a nice compound butter with my steak makes for complete.
I also agree with a side of grilled asparagus with a balsamic reduction or a nice bernaise and some roasted baby reds or fingerling potatos!!!

Can I just say that when questioned about why she likes her steak well done with no marinade or dry rub (and right before dousing with ketchup), my mother said "She eats steak for the meat taste".

Bumping this thread because I've changed my preference. Been getting Porterhouse's from my local butcher cut 1.5". Medium rare-medium is godly. Marinating with Dales steak marinade (Product of Alabama) and using Uncle Chris' Steak Seasoning.
