It's that time of year! Chili Recipes!!

  • I'd like to get some chili going in the crock pot and I'm looking to mix it up. Would anyone care to share their best with me and the rest of the board?

    This one kills. Ingredients will yield about 8 gallons, so obv scale to your needs.

    Ingredients
    36 tablespoons olive oil
    12 large onions, minced
    24 cloves of garlic, minced
    10 pounds of ground beef
    12 strips of bacon, chopped
    14 Italian sausages, boiled and chopped
    30 cups of water
    16 cups canned tomatoes
    10 green peppers, minced
    ¼ cup lemon juice
    2 cups burgundy
    6 teaspoons celery seed
    4 teaspoons cayenne pepper
    12 teaspoons cumin seed, crushed
    12 bay leaves
    24 tablespoons chili powder
    2 teaspoons basil
    15 teaspoons salt
    4 teaspoons oregano
    6 teaspoons brown sugar
    6 teaspoons black pepper

    Add to taste:
    Bourbon
    Guiness Stout
    Unsweetened chocolate

    Add to thicken:
    White cornmeal

    The Process:
    Prep
    Peel and mince onions and garlic.
    De-seed and chop green peppers
    Boil and chop Italian sausages
    Crush cumin seed
    Chop bacon strips

    Saute
    Heat olive oil in giant skillet
    Add onions and garlic and saute until golden brown.
    Add green pepper
    Add beef, bacon and sausage. Brown

    Cook
    Transfer meat mixture to huge cauldron (8-10 gallon capacity)
    Add the remaining ingredients while stirring
    Bring to a boil
    Reduce heat to simmer

    Simmer uncovered until ready to serve.

    Add cornmeal to thicken if desired.

    I don't have the recipe handy for the actual amounts... this is for a chili and rice style of dish. It's ingredient-heavy, but tasty.

    Chili powder
    Garlic powder
    Smoked paprika
    Curry powder
    Cumin
    Cayenne or chili flakes
    Cocoa powder
    Bay leaves
    Salt/pepper
    Diced tomatoes
    Tomato sauce
    A few shakes of tapatio
    A few shakes of worcestershire
    And some balsamic vinager

    A buddy of mine literally invented that recipe on the fly after entering a big chili competition he had no business being in, and it ended up winning the whole thing. It also got him into business school (the guy that interviewed him was a big time chili fan). I made it last year for the SB and it crushed. Kind of a pain in the ass to make but it's worth it...

    WHITE CHICKEN CHILI
    2 lbs boneless skinless chicken breasts - chopped
    2 med. onions - chopped
    2 tbsp minced garlic
    2 tbsp vegetable oil
    1 tbsp salt
    3 15oz cans Bush Great Northern Beans
    2 15oz cans Bush Navy Beans
    1 26oz box chicken broth
    2 4oz cans chopped green chiles
    1 4oz can diced jalapeno peppers
    1 4oz can chipotle peppers in adobo sauce (minced)
    2 tsp ground cumin
    2 tsp dried oregano
    1 tsp white pepper
    1/2 tsp cayenne pepper
    2 cups sour cream
    1 cup whipping cream

    (Mozzarella cheese & sour cream to add to bowls)

    In large pot saute chicken, onion, garlic, & oil until chicken is cooked. Add beans, chiles, broth, & seasonings. Bring to a boil, then reduce heat & simmer uncovered 1 hour or until thickens. Stir in sour cream & whipping cream. Remove from heat. Once in bowl, add some sour cream & sprinkle with mozzarella cheese. 12-15 servings (Makes 2 recipes).

    Quick question on sour cream and whipping cream. Is there a substitute that is a little less heart attack oriented?

    Could I use cream cheese for both?

    I will tell you, though, you MUST use real ground chilies.

    The Chile Shop in Santa Fe offers the best ground chilies to be found IMO. I recommend the Dixon Medium Hot as their best all around, with more than enough heat for most people. For those that like really hot, I'd go with the Nambe.

  • This is simple.

    One and a half pounds cooked stew beef cut into small pieces cooked not seared and drained.
    One onion chopped sweated with the meat
    Two cans Hunts stewed tomatos blended to a liquid add a package of Carroll Shelby chili fixins* use the masa if you wish I don't.
    Two large cans kidney beans using the liquid to thin as necessary.
    Mix it all up in a large stew pot and set it in a cast iron skillet over low heat. This keeps the hot spots down and the chili doesn't stick. Cook for at least two hours then cool and refrigerate over night. Re heat and serve.

    *my personal choice but other brands will do.

  • 1 pound of ground beef
    1 sweet onion
    3 fresh tomatoes chopped
    1 can of corn
    1 can of kidney beans
    1 can of black beans
    1 can of tomato soup
    1 can of beer
    2 tablespoons of chili powder
    1 tablespoon of Cumin
    1 tablespoon of Red Pepper
    1 tablespoon of brown sugar
    2 cups of water

    Brown the ground beef and then mix all ingredients into a crock pot and cook on low for 8 hours.

  • mines pretty basic, I try to keep it kinda healthy

    3 lbs ground turkey
    1 big can tomato puree
    1 big can tomatoes diced
    1 can dark kidney beans
    1 can light kidney beans
    1 large onion
    2 green peppers
    5-6 garlic cloves
    2 jalepenos
    1 tbsp chili powder
    1 tbsp cumin
    1 tsp papirika
    1 tsp cayenne pepper

    cook the turkey, drain the fat, chop the veggies, remove stems and seeds from jalepenos (unless you want it really hot), cook it all in crock pot for 10 hours then refrigerate for 24 hours.
