I don't know how the grits were served in the mess hall. I personally slow cook them for thirty minutes or so at about 4 times liquid per one part grits (stone ground). When they are close (about 5 minutes) I stir in about a cup of grated sharp cheddar and two tablespoons of butter along with a LOT of pepper and a bit of salt.

How they were served?
Well a couple of us thought it was cream of wheat fooled by appearance, so both a shipmate and I put brown sugar on top - I can tell you the first bit was not Grit-Tastic...

Oatmeal with a tsp of cinnamon is much healthier for one's body than grits. A bowl of homemade grits and butter is hard to beat taste wise though.

I love both. Oatmeal is better straight out of the box but grits win if done up right. 2 pieces of toast and an over-easy egg, bust open the yoke and get that all over the grits then make a little grits and egg sandwich.

Can't believe that I'm gonna agree with an Irish fan, but exactly the way I eat mine. Only difference is that I like a my eggs sunny side up.
And the grits have to be home cooked not instant. BIG DIFFERENCE
