How many players on Alabama and Georgia got offers from ND? I get why you used the SEC offer methodology, but it is FAR from a perfect measuring stick. I hate the perpetuation of using the SEC as the measuring stick for all things college football.
I'm sure both schools signed a ton of kids that ND didn't look at, either because they weren't a "fit" for the style of play, were not appropriate academically, committed early, or were not at positions of need - not to mention those who wouldn't have even considered ND.

Good information, however I would argue the talent gap between conferences is not as great as the polls suggest...at least not "NFL talent". Based on the NFL draft the differences between the top conferences is rather small. According to the linked article the 2011 draft:
Overall, the SEC had 38 players selected. Here’s a look at the other BCS conference totals: ACC – 35; Pac-10 – 31; Big 12 – 30; Big Ten – 29; Big East – 22av

Now a further analysis of average draft position would be needed to see if there is a big discrepancy among 1st rounders, etc.
