    I became vegan long before reading the book, but I thought that the link between a meat and dairy less diet to a decrease in cancer was intriguing. Are you saying the research he did regarding that link is false, or he stretched the truth? Or were you referring to other parts of the book?

    Based on his own data, the link between consuming processed grains and chronic disease was FAR FAR FAR more clear than anything. If you actually go through his data, he literally makes stuff up to support his premise and spins supporting evidence-based studies; the data does not at all suggest his conclusion. Just peruse the link, "The China Study" is a complete joke to us who are actually in the nutrition world and appraise studies for a living.

    I just had this discussion with a friend who just read Campbell's work and suddenly became a vegan. I am not at all against veganism, I think the biggest issue in nutrition today is that people do not consume enough vegetables, but do not use Campbell's work as justification because it is not even science.

    stoptothink - talk to me about the protein in quinoa, if you can. i have pretty much replaced brown rice (well, all rice) w/ quinoa and eat the hell out of it. i'm seeing 8g protein/cup of cooked quinoa. is that equatable to meat protein? i generally eat it w/ grilled chicken and either black beans or spinach. thanks in advance.

    Quinoa is a pseudo-grain which is unique in that it is a complete protein source(it contains all 8 essential amino acids). It is also is very low in gluten, which is a very good thing. Grains are traditionally eaten with legumes because they are complementary, eaten together they constitute a complete protein.

    i know edamame is high in protein as well @ 17g/cup - but is it a true legume?
