What's the problem with medical hardships? The kids get to keep their scholarship and continue school while not playing football. More schools should do it.The unethical thing to do would be to toss them on the street and be done with it. Does Saban put a gun to their head and make them sign the waiver?

No. He tells them they will never play football at Alabama ever again, regardless if the injury may be career ending or not.
If these kids want a degree from Alabama they have absolutely no choice but to accept the waiver.
Accepting the waiver ends their collegiate athletic career forever. But hey, like you say, at least they aren't tossed out on the street.

Bama can't give a medical hardship...only the NCAA can grant that. If someone has a problem with that rule, they shoudl take it up with the NCAA. They are the only authority for approving it. The onyl person that can initiate it is the player and it must be validated by a Medical Professional.
I honestly don't know why this isn't used more often by programs. There are kids who deserve to be on scholarship who aren't in a position to play football ever again. Does anyone really object to Tyrone Protho getting a medical hardship scholly? There are others that might be less known and their injuries not as severe but they qualify and it releases them from their obligation to football and alows them to complete their education. Oh the horror!!

Why do people ignore oversigning?
