tBB Homemade Chili recipes?

  • Have my own, curious of some other recipes out there. Looking at freezing rain later so figure a good crock pot of chili could be in order. Turkey, beef whichever. Wanna try something different

  • 1.Ground beef, I use angus beef
    2. Hot sausage (in a roll) jimmy dean
    3. Brooks chili starter biggest can
    4. 1 big can of hot chili beans 1 small can of the same.
    5. Tomato juice big can
    6. Hottest bar b q sauce there is. I use devils spit by famous Dave's.

    Season chili powder in with meat. Cook beef & sausage together. Drain grease then add chili powder & bar b q.

    Add the rest in after. Last during heating process add 1 hersey's chocolate bar.

  • Nothing fancy

    3 lbs ground turkey
    1 big can tomatoes
    1 big can tomato puree
    2 cans kidney beans
    1 onion
    2 green peppers
    garlic cloves
    2 jalepenos, no stems or seeds
    1 tbsp chili powder
    1 tbsp cumin
    1 tsp cayenne
    1 tsp papirika

    Cook the turkey and throw it all in a crockpot overnight. Mixed it up last night and put a beer in the mix, we will see if it changed the taste.

  • Ingredients yield abt 8 gallons, but you can scale it accordingly.

    Ingredients
    36 tablespoons olive oil
    12 large onions, minced
    24 cloves of garlic, minced
    10 pounds of ground beef
    12 strips of bacon, chopped
    14 Italian sausages, boiled and chopped
    30 cups of water
    16 cups canned tomatoes
    10 green peppers, minced
    ¼ cup lemon juice
    2 cups burgundy
    6 teaspoons celery seed
    4 teaspoons cayenne pepper
    12 teaspoons cumin seed, crushed
    12 bay leaves
    24 tablespoons chili powder
    2 teaspoons basil
    15 teaspoons salt
    4 teaspoons oregano
    6 teaspoons brown sugar
    6 teaspoons black pepper

    Add to taste:
    Bourbon
    Guiness Stout
    Unsweetened chocolate
    Add to thicken:
    White cornmeal

    The Process:
    Prep
    Peel and mince onions and garlic.
    De-seed and chop green peppers
    Boil and chop Italian sausages
    Crush cumin seed
    Chop bacon strips
    Saute
    Heat olive oil in giant skillet
    Add onions and garlic and saute until golden brown.
    Add green pepper
    Add beef, bacon and sausage. Brown
    Cook
    Transfer meat mixture to huge cauldron (8-10 gallon capacity)
    Add the remaining ingredients while stirring
    Bring to a boil
    Reduce heat to simmer
    Simmer uncovered until ready to serve.
    Add cornmeal to thicken if desired.

    1 8 oz. can of tomato sauce
    1 15 oz. can of beef broth + 8 oz
    1 medium sized red onion
    1 red bell pepper
    1 poblano pepper
    1 anaheim pepper
    2 jalapeno peppers
    1 stick of celery
    3 cloves of garlic

    Mix the following spices for dump 1:

    1 Tbsp onion powder
    2 tsp garlic powder
    2 tsp beef crystals
    1 tsp of chicken crystals
    1 Tbsp of Pacific Beauty Paprika
    1 Tbsp of Mexene Chili Powder
    1/2 tsp cayenne
    1/4 tsp black pepper
    1 package Sazon Goya

    Mix the following spices for dump 2:

    1 Tbsp of Mexene Chili Powder
    1 Tbsp of Ancho Chili Powder
    2 Tbsp Silver Cloud Light chili powder
    1 Tbsp Silver Cloud dark chili powder
    1 tsp cumin
    1/4 tsp white pepper

    Mix the following spices for dump 3:

    1 tsp onion powder
    1 tsp garlic salt
    1/2 tsp cayenne
    3/4 Tbsp Silver Cloud Light Chili Powder
    1 Tbsp cumin*

    Instructions

    1. Slowly sweat all veggies and then gray the meat in mixture and drain grease. 2. Slow boil meat in beef broth and 1 equal can of distilled water. 3. Add dump 1 and medium boil for 60 minutes. 4. Add dump 2 and medium boil for 45 minutes. 5. Add dump 3 and medium boil for 15 minutes. In last five minutes taste for heat — adjust as required.

    I actually add two to three yellow devil's tongue peppers during the process beginning in dump 1 as well. I will only slightly put a puncture in them and just let them soak though. These are hot ass peppers. I grow chili peppers with seeds that I get from an online sight called pepper joe's.

    Here is a pic of the yellow devil's tongue pepper. The next edit is another pepper that I grow that works better if you make it with boston butt other than brisket meat. It's the chocolate 7-pot chili pepper. Photo of this one is also provided. Both are over 1 million on the scoville unit scale though. Would really not dice the things.

    Edit: I have just mixed and matched recipes from here and there so you can use whatever brands of the spices that you prefer honestly. These are just the one's that I like.

    Gotta disagree with you on this one. People from Texas never put beans in their chili so I understand where he is coming from. I'm not from Texas or anything, but it is sacrilege to put beans in chili in Texas.

    I personally just don't like beans much so I tend to go that way. Texas did create chili though, so I would have to argue that chili is more authentic without beans.
